Beef coconut curry

Ingredients
- 500g chopped beef
- 1 onion
- 3 tomatoes
- 1/2 can coconut milk
- 10 curry leaves
- Valcom panaeng curry paste
- 1 green pepper
- peanut oil
- 1/2 a red chilli
- 1 inch square fresh ginger
- 1 tbsp fish sauce
- pinch of salt

Method
- Chop the onions and tomatoes and simmer in a pan until soft - 10 mins.
- Add the curry paste and chopped chilli, stir for a few minutes, then add the coconut milk and simmer for 10 mins.
- Fry the curry leaves in some peanut oil until crisp and set aside, then use the same oil to sear the beef.
- Add the beef, grated ginger, fish sauce, salt and green peppers to the sauce and simmer for 15 mins. Taste and add more salt if needed.
- Finish with curry leaves.
