Buldak chicken and tteokbokki

Ingredients
- 500g chicken thighs - bite sized pieces
- 2 cloves garlic
- 2 tbsp soy sauce
- 2 tbsp gochugaru
- 2 tbsp gochujang
- 1 tbsp oyster sauce
- 1 tbsp mirin
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1/2 red onion - sliced thin
- 1 spring onion white and green part cut into 2cm pieces
- mozzarella cheese - half a cup/decide with your heart
- 1 /2 packet tteokbokki ~100g
- 1 Tsp pepper
- 1 tbsp olive oil
- Half cucumber sliced to go on the side

Method
- Mix sauce ingredients - soy sauce, gochujang, gochugaru, mirin, oyster sauce, sesame oil, garlic, pepper, sugar
- Over medium high heat put the tbsp of oil.
- Fry chicken until brown on both sides
- Add the red onion, spring onion and tteokbokki. Fry for 30 seconds to 1 minute
- Add the sauce and turn down to low heat and cover. The tteokbokki will absorb the sauce
- After 2-3 mins of simmering, turn the stove off.
- Serve and add mozzarella cheese and garnish with spring onion! Missing from the photo but it’s nice to serve with some fresh sliced cucumber on the side !
