Cantonese San choy bao

Ingredients
- 800g Pork mince
- 2 Diced carrots
- 1 diced onion
- 4 diced garlic cloves
- 4 chopped green shallots
- 1 tin of water chestnuts diced
- 2 cos lettuces (leaves washed and separated)
- Salt and pepper to taste
- Spray oil
- 2 packets Lee kum kee san choy bao ready sauce packets
- Chopped mushrooms (2 handfuls)

Method
- Spray oil on pan, add diced garlic and onion. Saute
- Add pork mince and cook (breaking it up as you go) until cooked.
- Add diced carrot and mushroom. Saute.
- Add ready sauce packets (x2 for 800g mince) with a dash of water. Cook until any liquid is evaporated.
- Stir through half the shallots and water chestnuts. Season with salt and pepper to taste.
- Serve in lettuce cups with extra shallots and water chestnuts if desired. Can also add a little crispy chilli oil if you want some heat. Eat and enjoy. Quick and easy xx
