Chicken, Avocado and Cucumber Sushi

Ingredients
- Yaki Nori Seaweed
- Sushi seasoning
- Sushi rice
- Cucumber
- Avocado
- Chicken schnitzel
- Kewpi Mayo
- Soy sauce
- Sushi mat

Method
- Cook the sushi rice as per packet instructions. Once cooked add sushi seasoning and stir.
- To prepare the fillings, chop chicken, cucumber and avocado into strips.
- Unroll your sushi mat and place seaweed on mat shiny side down. Spread rice in a thin layer onto seaweed, leaving 2cm at the far end.
- Place fillings in a line in the middle of the rice. Squeeze the kewpi mayo along your fillings.
- Roll up your sushi, squeezing the sushi mat to create a sushi roll.
- Slice the sushi into portions that you enjoy eating them in.
- Place your sushi on a serving tray and serve with soy sauce.
- Enjoy your delicious sushi!
