Chicken egg noodles with vegetables

Ingredients
- Egg noodles (San Remo brand) - 1 pack of 6 nests
- 2 cups of veggies - Carrots, Beans, Capsicum, Spring onions (sliced thin)
- 2 tbsp Mirin seasoning
- 3 tbsp Dark soya sauce
- 3tbsp white pepper powder
- Salt as needed
- Vegetable oil
- 500 gms boneless chicken
- 5 eggs beaten and seasoned with salt and pepper
- Vinegar - 1 tbsp (optional)

Method
- Boil the egg noodles with salt as per instructions on the packet.
- Drain and let cold water run through it and keep aside. Drizzle a spoon of oil and toss the noodles to prevent n oodles from sticking to each other.
- Heat oil in a pan, Fry beaten eggs and scramble them till fluffy. Season with Salt and pepper. Keep aside.
- Add chicken pieces and fry on high flame for 5 minutes. Add veggies and fry for 3 minutes on high heat. Toss in the egg noodles and scrambled egg and give it a good mix.
- Add soy sauce, salt, white pepper powder and Miri seasoning. Add a dash of vinegar if needed. Mix it well and serve hot.
