Theme: One Bowl Wonder
Chicken Green Curry

Ingredients
- 1/2 Onion Thinly Sliced
- 1 tbsp Oil ( Any neutral Oil )4
- 400g diced Chicken Thighs
- 400ml Coconut Milk
- 1 tsp Fish Sauce
- 1 tsp Brown Sugar
- 1 Red Chilli
- 1 Bunch Corriander
- Valcom Green Curry Paste

Method
- Add oil to pan on medium heat. Fry sliced onions till softened 1-2 mins. Add 1/2 jar of Valcom Green Curry Paste, stir fry till fragrant.
- Add half of the 400ml coconut milk and stir fry until sauce thickens and you see some oil separating, about 3-5 mins.
- Add 400g diced Chicken Thighs and cook over high heat for 2 minutes. Add remaining coconut milk. 1 tsp fish sauce, 1 tsp sugar and bring to boil.
- Add 1 red chilli and the bunch of corriander. Optional add basil leaves. Ready to serve, goes well with rice.
