Ingredients
- 1kg chicken breast
- 1 230g jar Volcom laksa paste
- 500g bihoon rice vermicelli noodles
- 250g beansprouts
- I can coconut cream
- I litre chicken stock
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fried shallots
- Fresh shallots
Method
- Place rice vermicelli noodles in boiling water to separate. Cook for one minute , drain and set aside.,
- To make soup. Place 1 tablespoon of oil in a deep pot. Fry off 1 jar of laksa paste, add stock and coconut cream. Heat through till combined and place on a simmer.
- In a pan add 1 tablespoon of olive oil and fry off sliced chicken breast add salt and pepper to taste. Fry off in batches and set aside.,
- Assemble your laksa. In a laksa bowl place your noodles, fresh bean sprouts and chicken. Ladle in your soup . Top with your favorite toppings and enjoy!
