Theme: One Bowl Wonder
Chicken laksa “quick pot”

Ingredients
- 1 medium chicken breast
- 1 pak choy
- Handful button mushrooms
- 1 x 400ml can coconut milk
- 1 x lemon
- 1/2 jar Valcom laksa paste
- Sesame oil
- 250gm vermicelli noodles

Method
- Pour 1 teaspoon sesame oil into wok & 1/2 jar laksa paste. Simmer for a minute then pour can of coconut milk in and stir.
- Once simmering, add in cubed chicken breast and simmer until cooked.
- Add sliced mushroom and pak choy (after removing root end). Let simmer for 5 minutes.
- Boil water and pour into a container with noodles. Let sit for 10 minutes whilst simmering laksa.
- Once cooked, pour laksa over noodles and serve with a lemon wedge.
