Ingredients
- Chicken thigh fillets
- 1 head broccoli
- 1 packet flat rice noodles
- 1 jar Volcom pad thai paste
- Fish sauce
- Bean sprouts
- Lime juice
- Crushed peanuts
- Brown onion
Method
- Dice onion and chicken and cook in a frypan until brown (and cooked through). Take off the heat and put to the side.
- Cook noodles according to the packet.
- Steam broccoli and put to the side.
- Toss pad thai paste and 2 tablespoons of fish sauce through the noodles.
- Combine the noodles, chicken and onion, and broccoli.
- Separate into four portions and garnish with lime juice, bean sprouts and crushed peanuts.
