Theme: One Bowl Wonder
Chicken rice noodle salad

Ingredients
- 2 chicken thighs
- 1 tbsp lemongrass paste
- 2 tsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp Obento rice wine vinegar
- 1 tbsp Brown sugar
- 1 clove garlic (crushed)
- 1/2 tsp chilli flakes
- 100g vermicelli noodles
- 1 carrot (grated)
- 1 cup lettuce (finely sliced)
- 1 spring onion
- 1 handful Vietnamese mint

- OBENTO - RICE WINE VINEGAR
Method
- Thinly slice the chicken and coat in lemongrass paste and half the sesame oil.
- Fry chicken until cooked
- In a large bowl pour boiling water over noodles and let sit until the noodles are cooked through (about 5 minutes), drain water and set aside.
- Mix the remaining sesame oil, garlic, soy sauce, fish sauce, rice wine vinegar, brown sugar and chilli flakes to form the dressing.
- Place the noodles in a bowl and top with chicken, lettuce, mint, carrot and spring onions.
- Pour over dressing and enjoy.
