Chilli Eggs

Ingredients
- 2tsp Chiu Chow Chilli Oil
- 2x Organic Free Range Eggs
- Ix Tbsp fresh Parmesan cheese
- Ix green spring onion finely chopped
- Sesame Seeds to garnish
- Slide of bread of choice
- 1 tsp butter
- Himalayan sea salt and cracked pepper to taste

Method
- Slowly heat a stainless steel or non stick pan to a medium high heat.
- While pan is heating toast preferred bread in toaster or under grill
- Add 1 tsp of the chilli oil then crack the two eggs into the oil Cover the pan with a lid and let the eggs cook for a minute
- Take the lid off and sprinkle on the cheese and spring onions, place the lid back on and cook for another minute
- Once eggs are cooked to preference, take pan off the heat and set aside. Assemble eggs on toast, spreading toast with butter if desired, place eggs, then the remaining tsp of chilli oil, garnishing with sesame seeds. Finish with salt and pepper to taste.
