Chilli Lime Basil Pork Bowl

Ingredients
- 1 tbsp vegetable oil
- 1/2 brown onion, sliced
- 3 garlic cloves, finely chopped
- 500g lean pork mince
- 1 bunch bok choy, chopped, separating stems & leaves
- 1 red chilli, deseeded & sliced
- 2 cups tightly packed thai basil leaves
- 4 tbsp lime juice
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tsp white sugar
- 1.5 cups uncooked jasmine rice

Method
- Cook rice per packet instructions.
- To make sauce, combine lime juice, oyster sauce, fish sauce, soy sauces & sugar in a bowl. Stir until sugar has dissolved.
- Heat oil in a wok over high heat.
- Add onion & garlic & stir fry for 1 min.
- Add pork mince & stir fry for 5 mins, or until pork isn't pink.
- Add sauce, stirring through to coat pork & cook until the sauce begins to caramelise.
- Stir in bok choy stems and cook for 2 mins.
- Add chilli, basil & bok choy leaves and stir fry until wilted.
- Serve over rice.
