Chinese-Inspired Soy Braised Beef Cheeks (4-Hour Oven Casserole)

Ingredients
- Ingredients•4 beef cheeks (about 1.2-1.5kg total)
- 3 tbsp light soy sauce
- 2 tbsp dark soy sauce (for colour & depth)
- 2 tbsp Shaoxing wine (or dry sherry)
- 1 tbsp oyster sauce
- 4 cloves garlic crushed
- 1 tbsp brown sugar
- 4cm piece ginger, sliced
- 2 spring onions, cut into large pieces
- 2 Star Anise
- 2 bay leaves
- 1 small cinnamon stick
- 1 tbsp fermented black beans
- 2 cups beef stock
- To serve:
- Steamed rice
- Fresh coriander
- Sliced red chilli if you like it hot.

Method
- Prepare the beef cheeks dry and trim excess sinew if needed. Season lightly with white pepper.
- Heat oil in a heavy casserole dish ( Dutch oven style) over medium high. Sear the beef cheeks and set aside.
- In the same pot , add garlic, ginger and spring onions. Cook until fragrant ( about 1 - 2 minutes). Stir in brown sugar and let it caramelise.
- Add soy sauces , oyster sauce and Shaoxing wine and let it bubble for 2 minutes .
- For the braising liquid add beer stock , water , star anise, bay leaves.
- Cover tightly with lid . Place in 160 degree Celcius oven for 4 hours. Turn the beef once halfway through. By the end the cheeks will be extremely soft.
- Serve with Jasmin rice. Spoon over extra sauce. Top with extra bay leaves for decoration if you like. Enjoy ! ( worth the long wait as very delicious and the meat so soft and tender )
