Chinese Twice Cooked Pork (Hui Guo Rou)

Ingredients
- 350g pork ribs
- spring onion
- Shao Xing wine
- ginger
- Sichuan peppercorns
- 1 ½ tbsp spicy bean paste
- 2 cloves garlic
- 2-3 stalks Chinese leeks
- light soy sauce
- 1 tbsp Shao Xing win
- 1 cup cooked rice
- 1 green chilli

Method
- Heat up wok with 1 tsp oil and sear the pork ribs until nicely caramelised. Remove and set aside
- Using the same wok, add a tbsp of oil and sauté the garlic and spicy bean paste for 30 secs.
- Turn to high heat and toss back in the pork belly slices and add in the leeks and green chillie
- tir for 2 mins and add in Shao Xing wine, light soy sauce and sugar. Once leeks are softened, remove and serve hot with steamed rice
