Choo Chee Chicken curry

Ingredients
- Chicken thighs
- Curry paste
- Coconut milk
- Fish sauce
- Vegetable oil
- Chicken stock
- Sugar
- Pumpkin
- Green veggies

Method
- Heat oil in a heavy saucepan, cook the curry paste until fragrant - then add the coconut milk. Add chicken stock, sugar and fish sauce.
- Add the chicken thighs and cook until browned. add the pumpkin and veggies.
- Taste test! Add more fish sauce to balance the flavours if needed.
