Chop Suey

Ingredients
- 1kg chicken breast
- 2 cups mixed vegetables
- 2 cloves garlic
- 3 tbsp soy sauce
- 1 tbsp cornstarch
- 1 cup chicken stock
- 2 tbsp vegetable oil
- Cashew nuts for decoration

Method
- Heat vegetable oil and garlic in a pan. Add chicken and brown.
- Add vegetables- sauteed until tender (5-7 mins).
- In a small bowl, mix soy sauce, cornstarch, and broth. Pour into the pan.
- Stir until sauce thickens. Serve hot over rice or noodles.
