Coconut Water Nourishing Chicken Soup

Ingredients
- 1 whole chicken (about 1.2kg)
- 1 tbsp Sesame Oil
- 1 tbsp Oyster Sauce
- 1 tbsp Squid Fish Sauce
- 1 tsp minced garlic
- 1 tbsp minced ginger
- 1 tsp sugar
- Salt and pepper to taste
- Half a wombok, washed and cut
- 2 carrots, cut into 2cm
- 6 shitake mushroom, soften and sliced
- 6 red dates, pitted
- 20g goji berries
- 1 cup coconut water
- Chinese coriander to garnish

Method
- Washed and cleaned chicken. Pat dry with paper towel. Marinate chicken with sesame oil, oyster sauce, fish sauce, minced garlic, minced ginger, sugar, salt and pepper and set aside in the fridge for 30 minutes.
- Using a pressure cooker, arrange the wombok, carrot, shitake mushroom at the bottom of the pot. Put marinated chicken on top of the vegetable arrangement and top with red dates and goji berries.
- Add 1 cup of coconut water in the pressure cooker. Set to pressure cook for 20 mins.
- Once cooked, serve hot for this one pot nourishing coconut chicken soup. Garnish with Chinese coriander for its unique flavour and colour!
