Creamy Green Curry Chicken

Ingredients
- Delicious Thai green curry chicken, rich, thick, creamy & aromatic.
- 400 gms chicken breast (diced)
- 1/2 jar of green curry paste
- 200 mls coconut cream
- 70 gms bamboo shoot slices
- 1/2 zucchini (sliced)
- 1/2 carrot (sliced)
- 1/2 onion (sliced)
- 1/2 red capsicum (sliced)
- 2 cucumber (sliced)
- Garnish- chopped red capsicum, chopped coriander, 4 Thai basil leaves
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 1 teaspoon salt
- 4 tablesp cooking oil
- 1 yuzu lemon

Method
- Heat up 2 tablesp of cooking oil in frying pan, add diced chicken & fry until just cooked.Leave it aside in a bowl.
- Stir fry 1/2 jar of green curry paste with 2 tablesp oil over medium heat until fragrant.
- Add 200 mls of coconut cream & stir fry till well combined.
- Add the onions, zucchini, red capsicum, bamboo shoot slices & carrots. Fry for about 5 mins. Then add the cooked diced chicken.
- Add 1 teaspoon fish sauce, 1 teaspoon salt & 1 teaspoon sugar. Stir fry till slightly boil and cooked.
- Serve with boiled rice. Garnish with chopped coriander, chopped red capsicum & sliced cucumber. Enjoy it with a squeeze of yuzu lemon juice.
