Creamy green soba noodle salad

Ingredients
- 300g tofu
- 1 cucumber
- 1 avocado
- 1 cup edamame
- Spinach
- 1/2 cup cashews
- Mint
- 1 tbsp miso paste
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- Juice of 1 lime
- 1 packet hakubaku soba noodles
- 1 tbsp sesame seeds
- 2 tbsp rice wine vinegar

Method
- Chop up tofu and fry in a little olive oil until golden brown
- Cook soba noodles as per noodle instructions. In the last minute add your edamame to the pot to heat it through.
- Chop up cucumber, avocado, mint, spinach.
- Mix together the dressing ingredients - soy sauce, lime juice, sesame oil, rice wine vinegar and miso paste.
- In a large bowl, mix together cooked soba noodles and edamame, golden brown tofu, vegetables, cashews and sesame seeds. Stir until well combined.
- Divide into 4 bowls and garnish with extra mint or cashews to taste! Enjoy!
