Crispy Chicken and Avo Nigiri

Ingredients
- Crumped Chicken
- Sushi Rice
- Avocado
- Seaweed
- Kewpie Mayo
- Rice wine vinegar
- Tonkatsu Sauce
- Sushi and Sashimi Soy Sauce
- Pickled ginger
- Salt
- Sugar
- Oil

Method
- Wash 2 cups of sushi rice until clear. Once clear add 2 1/2 cups water. Add to rice cooker and await cooking process to be complete. Whilst rice is cooking combine 3 tbsp of rice wine vinegar, 2 tbsp of caster sugar, 1 tsp of oil and 1 tsp of oil and mix in a bowl until combined. Once rice cook add liquid mix and combine together.
- Add crumbed chicken to air fryer and cook until golden down. Whilst chicken cooks cut the avocado in thin slices. Once chicken is cooked also cut into thin slices.
- Get 1 tbsp of rice mixture and roll into a rectangle shape. Place a slice of chicken and avocado on top. Place a piece of seaweed around the rice, chicken and avo. Make as many as you desire. Once this process is complete drizzle kewpie mayo, sushi sashimi soy and tonkatsu sauce over nigiri. Add pickled ginger to the side. Now enjoy!
