Crispy Chicken Tenders with Honey Mustard Dipping Sauce

Ingredients
- 1.5 cups Obento panko bread crumbs, 8 chicken tenderloins, Batter: 1 egg, 1tbsp Dijon mustard, 1/2 tbsp truffle mustard, 2 tbsp Plain flour, 1/2 tsp salt, 1/2 tsp pepper, Pinch of paprika. Sauce: 1/3 cup mayonnaise, 1 tbsp Dijon mustard, 1 tsp truffle mustard, 1.5 tbsp honey, 1 tsp lemon juice, Salt and pepper to taste

Method
- 1. Oven to 200 degrees Celsius. 2. Spread panko crumbs on tray and bake for 3 mins, toss and bake again for 3 mins then let cool. 3. Mix batter ingredients until smooth 4. Put chicken in batter to cover then put into breadcrumbs to cover. 5. Place the crumbed chicken on a wire rack on top of an oven tray. 6. Bake for 15 mins 7. While chicken is baking mix sauce ingredients. 8. Sprinkle chicken tenders with salt and serve with dipping sauce.
