Crispy Rice With Fried Egg And Garlic Greens

Ingredients
- 2 cups of day old rice.
- 1/2 Tablespoon ginger, grated.
- 2 Tablespoons soy sauce.
- 2 Tablespoons neutral oil.
- 2 cloves garlic, minced.
- 6 stalks broccolini, stems sliced into 1.5 inch pieces.
- 1 Avocado, diced.
- 1 scallion, thinly sliced.
- 2 Tablespoons Lee Kum Kee Chiu Chow Chilli Oil(or more to taste).
- 2 eggs.

Method
- In a small bowl or jug mix the ginger with the soy sauce and set aside.
- Heat a tablespoon of oil in a large pan over medium heat, add the rice in a thin layer across the base of the pan and flatten down with a spatula or the base of a measuring cup. Leave the rice untouched for 15 minutes or until golden on the base. Divide between two bowls.
- Add the other tablespoon of oil to the pan and fry the broccolini with the garlic, tossing until the broccolini turns bright green and just starts to soften. Divide the broccolini between the two bowls with the rice.
- In the same pan fry your 2 eggs until crisp around the edges with a runny yolk. Add the eggs to the plates with the rice.
- Add the avocado to the plates and pour over the soy/ginger mixture. Drizzle over the chilli oil, scatter with sliced scallions and serve.
