Crispy tofu with fish fragrant sauce

Ingredients
- Firm tofu
- Corn starch
- Sauce
- 225g sugar
- 125ml water
- 50ml soy sauce
- 50ml vinegar
- 35g miso paste
- 1 tbsp black vinegar
- 1 tbsp chilli bean paste
- 1 tbsp chilli oil
- 1/2 tbsp minced ginger
- 1 tbsp minced garlic
- 1 tsp ground Sichuan peppercorn

Method
- For the fish-fragrant sauce, put the sugar and water. Whisk over medium heat to dissolve the sugar, then increase the heat to high, stirring until the mixture starts to boil. Add the sauce ingredients and 1 tsp salt, stir to combine and leave it to simmer until it has a glazy caramel-like consistency.
- Dry firm tofu and coat with corn starch. Heat oil for deep frying and fry tofu until golden.
- Plate tofu and drizzle with sauce, garnish and serve.
