Cucumber and Soba noodles salad

Ingredients
- 150 gms of dry soba noodles
- 400 gms of lean chicken, sliced into strips
- 1 lebanese cucumber, sliced thinly
- • 1 spring onion bunch, thinly sliced• 15 gms of coriander, finely chopped• 1 red capsicum, thinly sliced• 1 carrot, grated• 20 gms of peanuts, roughly chopped
- DRESSING• 30 mls of sesame oil• 40 mls of soy sauce• 40 mls of lime juice• 1 red chilli, finely chopped• 10 mls of honey• 15 gms of miso paste• 60 mls of water

Method
- Cook noodles according to packet instructions.
- Heat a frypan over medium-high heat and add beef. Cook for 4-5 minutes or until cooked through.Remove and set aside.
- Combine dressing ingredients together and set aside.4. Combine cooked noodles and beef with cucumber, spring onion, coriander, capsicum, carrot andpeanuts. Toss to combine.5. Divide noodle salad into four serves and store leftovers in the fridge separately from dressing. Whenready to serve, drizzle with dressing and toss to combine.
