Delicious Veggie curry delight

Ingredients
- Tofu 250g
- 2 tspn oil
- 6 large mushrooms
- Hakubaku organic upon 270g
- 1 Zuchinni
- Canned lentils
- Canned corn
- Coconut cream
- 1 onion
- 2 x canned diced tomatoes
- Malaysian red curry paste

- HAKUBAKU - ORGANIC UDON NOODLES
Method
- Heat oil over pan. Fry onion, zuchinni and mushrooms for 2 minutes
- Add diced tomatoes, coconut cream, corn, lentils and shredded tofu. Then add curry paste and adjust to taste
- Boil pot of upon noodles for 8 minutes
- Drain udon, add to a bowl and add curry sauce - enjoy!
