Easy Japanese Fish Burger

Ingredients
- 8x Strip Pieces of Battered Frozen White Oven Fish
- Ix Loaf of Ciabatta Bread
- 1x 200g of Mixed Green Leaf Salad
- Ix Medium Sized Carrot
- 1/4 Red Capsicum
- 1/4 Onion
- 1 TBSP Soy Sauce
- 1/4 Cup White Vinegar
- 1 TSP Raw Sugar
- 1 Garlic Clove Diced
- 2 TSP Squid Fish Sauce
- 1 TBSP Sesame Oil
- 1 Lemon Cut into Wedges
- Kewpie Mayo

Method
- Preheat the oven at 200 degrees celsius (fan forced) and line a tray with baking paper. Place 8 strips of battered frozen fish of your choice onto the lined tray and bake for 16-18 min until golden brown.
- Using a chopping board and vegetable peel, peel the carrot into strips. With a kitchen knife, finely slice the capsicum and onion.
- In a bowl, mix the soy sauce, vinegar, sugar, chopped garlic, Squid fish sauce, sesame oil and the juice of two lemon wedges. Toss in the chopped carrot, capsicum and onion in with the sauces. Set aside to marinade.
- On a chopping board, cut the ciabatta loaf vertically into four even squares and slice them down the middle to open. Drizzle Kewpie mayo onto both of the inner sides of each bun and place a handful of the green leaf salad mix onto the bottom.
- Layer each bun with the marinated vegetables and place two strips of cooked crispy battered fish for the top layer.
- With a spoon, drizzle the leftover marinade sauce from the bowl directly on top of the fish.
- Optional: For an extra fab look, use some leftover shaved carrot and snake it onto a wooden BBQ stick. Place it as a topper for the Lunar New Year. Repeat on all servings, plate up and enjoy!
