Easy peasy curry

Ingredients
- 1 garlic clove
- 2 chicken thighs
- 2 potatoes
- 2 tbsp Vegetable oil
- Curry paste
- Coconut milk
- 90 sec rice
- 2-3 stalks broccolini

Method
- In a large pan, heat oil in a frypan and start browning chicken (diced) and garlic
- Add cubed potatoes and brown the sides
- Add cut broccolini
- Add half a jar of curry paste and a cup of water, then let it simmer for 15-20mins
- Add a tin of coconut milk and let simmer for 5 minutes
- Serve with rice
