Easy salmon sushi

Ingredients
- 500g Rice
- 3 teaspoons Caster sugar
- 3 tablespoons obento rice wine vinegar
- Half a cucumber sliced
- 1 smashed avocado
- 2 nori sheets
- Kewpie mayonnaise to taste
- Wasabi to taste
- 200g smoked salmon

Method
- Cook the sushi rice
- Mix the caster sugar with rice wine vinegar and add to rice and mix
- Oil the bottom of a Pyrex dish
- In layers, add salmon, rice, nori, mayonnaise, cucumber, avocado, wasabi, rice and a final layer of nori
- Turn upside down, refrigerate for an hour and enjoy
