Egg Fried Rice with a twist

Ingredients
- Meal prepped oven cooked egg with veggies , overnight rice, soy sauce, green chillies
- 1 tbsp Olive oil
- 5 eggs
- Green chillies
- Coriander leaves
- Capsicum/Bell peppers
- Mushrooms
- Spring onions
- Wraps
- Left over rice
- Soy sauce
- Spinach

Method
- Oven baked as meal prep, 5 eggs, chopped spinach, capsicum/bell pepper, coriander leaves, green chillies, mushrooms, salt and pepper to taste, whisk it all , pop it in the oven 350 degrees for 35/40 minutes.
- Use left over rice and left over oven baked eggs.
- After adding 1 tbsp olive oil in the pan, add left over oven baked eggs with veggies and scramble it , cook for few seconds then add left over white rice and add soy sauce in the white rice, mix it all and the dish is ready in 5 minutes
