Fast Miso Coconut Noodles with Lamb Meatballs & Crispy Nori

Ingredients
- 250g lamb mince
- 1 tbsp miso paste
- Freshly ground black pepper
- 200ml coconut milk
- 200–300ml water or light chicken stock
- 1–2 tbsp miso paste (to taste)
- 2 portions noodles (egg or rice)
- Yaki nori sheets, torn or sliced
- few drops of chilli oil or sesame oil

Method
- Prepare the meatballs-In a bowl, mix the lamb mince with the miso paste and a pinch of black pepper until just combined. Roll into small meatballs (about walnut-sized).
- Cook the meatballs-Heat a pan over medium heat with a small amount of neutral oil. Sear the meatballs until golden on all sides and cooked through. Remove from the pan and set aside.
- Cook the noodles-Cook the noodles according to packet instructions. Drain and set aside.
- Make the broth-In a saucepan, gently heat the coconut milk with the water or stock until just simmering. Remove from the heat and whisk in the miso paste until fully dissolved.
- Bring everything together-Return the lamb meatballs to the broth and warm through. Add the noodles and gently toss to coat.
- Serve-Divide the noodles, broth and meatballs between plates or bowls. Finish with torn yaki nori and, if desired, a light drizzle of chilli oil or sesame oil.
