Fiery Buldak Prawns With Mango Salsa

Ingredients
- 300g Raw prawns, shelled and deveined.
- 2 Tablespoons of Buldak sauce.
- 1 Tablespoon neutral oil, peanut, vegetable etc.
- MANGO SALSA:
- 100g mixed lettuce leaves, washed.
- 1 Ripe mango, peeled and diced.
- 1 Ripe avocado, peeled and diced.
- 1/2 Red onion, peeled and diced.
- 1/2 Red capsicum, diced.
- 1/4 Cup cilantro, chopped.
- 1 Red chilli, minced.
- 1 Tablespoon sesame oil.
- 1 Tablespoon lime juice, freshly squeezed.
- 1 Teaspoon fish sauce.
- Lime wedges to serve.

Method
- In a small bowl whisk together the sesame oil, lime juice, fish sauce and minced chilli. Toss through the mango, onion, avocado, capsicum and cilantro and set aside.
- Coat your prawns in the Buldak sauce. Heat the oil in a wok or pan over medium/high heat and cook the prawns on one side for 2-3 minutes, turn the prawns and cook until opaque and cooked through. Remove from the heat.
- Divide the lettuce and salsa between plates and top with the prawns. Serve with extra lime wedges on the side.
- NOTE: Buldak sauce is available in most supermarkets and Asian grocery stores. Warning - It is very spicy!
