Firecracker Beef

Ingredients
- 300g Asian sliced beef, sliced in halves. (see notes)
- 1 Tbls neutral oil
- 2 garlic cloves, crushed
- 1 tsp chilli flakes
- FIRECRACKER SAUCE:
- 2 Tbls soy sauce
- 2 Tbls rice wine vinegar
- 4 Tbls sriracha sauce (see notes)
- 4 Tbls brown sugar
- TO SERVE:
- Rice or noodles
- Diced cucumber, carrot, radish
- Sesame seeds
- Extra sriracha sauce (if you dare)
- Scallions, thinly sliced

Method
- Mix the soy, sriracha, sugar and rice vinegar in a small bowl and set aside.
- Using a wok or large frying pan heat the oil until smoking hot, Add the beef in a single layer and fry for a few minutes.
- Add in the garlic and chilli flakes and toss through. Add the sauce and stir to coat the beef. Cook for another 5-7 minutes, only stirring every minute or so until you see the beef caramelising. Once it is well caramelised turn off the heat.
- Divide the rice or noodles into two bowls. Top each bowl with half of the beef, some cucumber, carrot and radish and sprinkle over sesame seeds and scallions. Serve with extra sriracha on the side.

- NOTES:
- I like to use the rolls of shaved beef from the Asian grocer, they're perfect for this dish. I slice them in halves, or thirds if they are long rolls. Alternately you can use beef, pork or chicken mince.
- Too hot ? Start with two tablespoons of sriracha and omit the chilli flakes. Taste and add some more sriracha if needed.
