Forest Garden Japchae with Bok Choi, Mushrooms & Golden Tofu

Ingredients
- 8 Swiss brown mushrooms
- 1 brown onion
- 2 Bok Choi
- 2 packets Oban sweet potato noodles
- 1 clove garlic
- 1/3 cup soy sauce
- 1 tsp sugar
- 2 tsp rice wine vinegar
- 2 tsp sesame oil
- Sesame seeds for garnish
- Spring onion for garnish
- 1 block tofu
- 1 egg for the non vegan!

Method
- Roughly chop onion, Bok Choi and mushrooms and stirfry them until charred
- Boil sweet potato noodles
- Mix together soy sauce, crushed garlic, sugar, rice wine vinegar and sesame oil
- Once noodles are cooked stir the sauce through and add the vegetables
- Chop tofu into small squares and stirfry until golden. Scramble egg if using
- Add tofu/egg to the noodles and veg and serve and garnish with sesame seeds and spring onion
