Fresh and crunchy San choy bao

Ingredients
- Pork mince
- 1 carrot
- 2 cloves Garlic
- 1 stick spring onion
- San choy bao sauce
- Lettuce
- Kewpie

Method
- Grate carrot, dice garlic, cut spring onion, cook carrot and garlic in a oiled frypan on low heat until soft, turn up heat to medium, add pork mince, break it up with a wooden spoon and cook until brown/cooked through.
- Turn down heat. Stir in sauce with 2 tbs water and simmer for 2 mins
- Rinse lettuce leaves and shake off excess water. Arrange on a plate
- Add cooked mince to lettuce leaf, drizzle with kewpie mayo, sprinkle cut up spring onion on top.
