fresh rice paper rolls

Ingredients
- cabbage
- spring onion
- cucumber
- carrot
- coriander
- mint
- chicken breast
- garlic
- ginger
- lemongrass
- vulcan rice paper
- kewpie
- hoisin
- peanut butter
- squid fish sauce
- crispy chilli oil

Method
- marinate 2x chicken breast with 1 tbsp minced ginger, 1 tbsp minced lemongrass, 2 gloves of minced garlic, 1 tsp squid brand fish sauce, 1 tsp sugar, salt
- add oil to pan on medium heat and cook chicken breast. once chicken is cooked place in fridge to cool.
- while chicken is cooling, shave white or red cabbage, grate carrot, pick mint and coriander leaves, slice spring onions and cucumber into long strips.
- for the dipping sauce mix 2 tbsp kewpie mayo 1 tbsp peanut butter, 2 tbsp lee kum kee hoisin, 1 tsp squid brand fish sauce aand if you like it spicy add desired amount of your favourite crispy chilli oil
- once chicken is fully cooled eithe slice into strips or shred.
- for assembly fill a bowl with warm water and dip rice paper 1 at a time then place desired amount of each prepared ingredient and roll up.
- dip in the sauce and enjoy
