Fried Tofu with Chilli dressing

Ingredients
- 450g firm tofu, drained, cut into 3cm pieces450grams firm tofu, drained, cut into 3cm pieces1/2 cup rice flour1/2 cup rice flour1/2 cup vegetable oil1/2 cup vegetable oil250g cherry tomatoes, quartered250grams cherry tomatoes, quartered1/2 cup Thai basil leaves1/2 cup Thai basil leaves1/2 cup coriander, chopped1/2 cup coriander, chopped1/4 cup unsalted roasted peanuts, chopped
- Thai-style dressing 1/4 cup rice wine vinegar 1/4 cup rice wine vinegar 1/3 cup fish sauce 1/3 cup fish sauce 1 tbs brown sugar 1tablespoons brown sugar 2 limes, juiced 2 limes, juiced 3 bird's eye chillies, finely chopped 3 bird's eye chillies, finely chopped 4 lime leaves, shredded

Method
- Step 1 of 3To make dressing, combine ingredients in a small bowl.Step 2 of 3Coat tofu in flour. Heat oil in a large deep-frying pan over medium-high heat. Cook tofu, in batches, for 2 minutes each side or until golden. Transfer to a plate.Step 3 of 3Drizzle tofu with half of the dressing. Top with tomato. Sprinkle with basil, coriander and peanuts. Serve with remaining dressing.
