Ginger caramel salmon

Ingredients
- 1 Tbsp fresh chopped ginger
- 2 salmon fillets , skin off, cut into 1 inch cubes
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1/4 red onion diced
- 1 tsp chili paste
- 150g snow peas or other green vegetables
- Vegetable oil
- Rice to serve
- Spring onion to garnish
- Coriander to garnish

Method
- Gently heat some vegetable oil and toss the snow peas for a few minutes. Remove from pan and begin to fry the ginger and onion.
- Mix the fish sauce, sugar and chili together and add to the pan once the onion is translucent. Stir for 1 minute or so and then add 3 tbsp boiling water and stir until the Carmel begins to thicken.
- Add the salmon and cook for 3-4 minutes in the caramel. Add the snow peas back to the pan to heat for 1 minute.
- Serve on white rice and garnish with spring onions and coriander.
