Ginger Miso Steamed Ling with Fresh Rice

Ingredients
- 4 tbsp Mirin
- 1 tbsp white miso paste
- 1 tbsp honey
- 400g Ling fillet(s)
- Sesame oil for drizzling
- 4cm Ginger piece
- 4 Spring onions
- 2 cups of rice
- 4 pak choi

Method
- Mix Mirin, white miso paste & honey to form a marinade for the ling fillet(s).
- Coat ling fillet(s) with marinade and portion into two.
- Clean the pak choi and half. Prep ginger into matchsticks pieces. Slice spring onions on an angle.
- On a piece of parchment lay 1 portion of pak choi. On top lay 1 portion of ling. Over the top place the ginger and spring onion. Wrap up the parchment into a tight seal for cooking.
- Place parchment pockets on baking tray and place in oven at 180 for 12 minutes.
- Using a rice cooker, cook the rice while the fish is in the oven. Allow the fish to rest in the packet while the rice finishes.
- Fluff rice once finished. Plate rice and fish for enjoying!
