Gochujang Chicken

Ingredients
- 2.5 cups, uncooked short grain white rice
- 2.5 cups of water
- 1 kg boneless skinless chicken thigh
- Three green onions sliced
- 6 garlic cloves sliced
- Two heads of broccoli chopped
- 2 tablespoons neutral tasting oil
- 1 teaspoon soy sauce
- 1 tablespoon oyster sauce
- 2 teaspoons toasted sesame oil
- Generous pinch of toasted sesame seeds to garnish
- MARINADE: one tablespoon soy sauce, 1 tablespoon Mirin, quarter teaspoon white pepper, two tablespoons cornstarch, 1 teaspoon baking soda, 1 tablespoon neutral oil
- STIRY FRY SAUCE: 3 tablespoons Korean chilli paste (gochujang), 1 tablespoons chilli flakes, 1.5 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, 3 tablespoons of mirin, black pepper to taste, 5 tablespoons of water, 1.5 tablespoons of cornstarch

Method
- Wash the rice to remove any dust or debris drain and repeat two or three times add the same amount of water to the bowl and pop it into a rice cooker.
- To marinate the chicken trim off any excess skin or fat that you may want to remove cut the chicken into bite-size pieces transferred to a mixing bowl at all the marinated ingredients and give it a good massage. set aside
- To prepare the vegetables: thinly sliced the green onions finally chopped the garlic cloves, and chop the heads of broccoli into bite size pieces
- Combine all the stirfry sauce ingredients in a small container and mix well set aside
- Bring a pot of water to boil and boil broccoli until fork tender
- To a pan add one tablespoon of oil heated over high heat and once hot add marinated chicken. Depending on the size of your wok you can do this in batches spread it out and let it sear for one to 2 minutes or until nicely brown on the bottom flip and give it a few stirs
- Add the finely chopped garlic and green onion (saving some for garnish) and then cook for 3 to 4 minutes until the chicken is cooked through
- Give the sauce a quick stir and add it to the walk. Simmer for one to 2 minutes or until the sauce gets nice and glossy. Turn off the heat. Add the sesame oil and sesame seeds. Give it a final mix.
- Assemble your rice, chicken and broccoli in a bowl and season with sesame oil and sesame seeds and garnish with spring onion. Devour.
