Golden Garden Soba Bowl

Ingredients
- 400g dried soba noodles
- 4 large eggs (soft-boiled)
- 1 cup thinly sliced red cabbage
- 1 cup green beans or broccolini, trimmed
- 4–6 radishes, thinly sliced
- 150g pumpkin, diced
- 2 spring onions, finely sliced
- Toasted sesame seeds
- Japanese chilli flakes / togarashi (optional)
- 4 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp grated fresh ginger
- 1 small garlic clove, minced

Method
- 1. Cook the eggs: Soft-boil (6–7 minutes), cool in ice water, peel and halve. 2. Cook the soba: Boil according to packet instructions, drain and rinse under cold water. 3. Blanch the greens and boil pumpkin: Briefly cook the green beans/broccolini, then cool. Boil pumpkin until soft, then cool. 4. Make the dressing: Whisk soy sauce, rice vinegar, sesame oil, honey, ginger and garlic. 5. Assemble: Toss noodles with dressing, then fold through cabbage, greens, pumpkin and radish. 6. Serve: Divide into bowls, top with eggs, sesame seeds, spring onion and a sprinkle of chilli or shichimi.
