Golden Glaze Teriyaki Salmon

Ingredients
- 2x Salmon fillets ~100g
- 1/2 Tbsp Obento Mirin Seasoning
- 1 Tbsp Sugar
- 2 Tbsp Lee Kim Kee Premium Soy Sauce
- 3 Tbsp Obento Cooking Sake
- Toasted Sesame seeds for garnish
- 1 bunch Broccolini
- 1 cup of Japanese sushi rice

Method
- Wash and drain the rice, put it to Quick Cook in the rice cooker.
- Season the salmon fillets with salt and pepper.
- In a small pan, pre heat to hottest setting (with oil if skinless fillets)
- Sear the salmon on both sides in the pan, about 3 min each side
- While cooking the salmon, boil 2l of water for the broccolini and chop/wash the broccolini.
- Remove the salmon from the pan and set aside on a paper towel. Leave the stove on.
- Mix the mirin, sugar, soy and sake in a cup, then add it to the pan.
- Reduce the sauce until it starts to form large bubbles and is thickening up to become saucy.
- Add the salmon back to the pan, reduce the heat to half and gently scoop up the sauce and pour it over the salmon. Repeat this until it starts to form a glaze.
- Meanwhile, add the broccolini to a steamer with the hot water and steam it for 3 mins.
- Once the salmon is glazed up, plate up the cooked rice, salmon on top (pour a little extra teriyaki on top!), the broccolini and sprinkle sesame seeds on top.
