Golden Nori Umami Rolls

Ingredients
- Yaki nori for sushi
- Carrots grated
- Tuna
- Fresh spinach

Method
- Heat a drizzle of oil in a pan over medium heat. Add the carrot and cook for 2–3 minutes until slightly softened
- Add the spinach and cook until wilted. Stir through the tuna and season to taste (salt, pepper or a splash of soy sauce if you like).
- Continue cooking for 2–3 minutes until the filling is warm, savoury and full of flavour. Remove from heat.
- Lightly toast the Yaki Nori sheets in a dry pan until crisp
- Spoon the warm filling onto each nori sheet, roll tightly and serve immediately while crunchy.
