Golden Taro Soup

Ingredients
- 1 cup taro in small dice
- 1 1/2 cups water
- 1 tsp grated fresh ginger
- 1 small chilli , deeeded if needed, or 1 Tb red capsicum
- 1 1/2 tsp soy sauce or tamari
- 1 Tb chopped cashews, raw or toasted
- 1/2 sheet Obento Yaki Nori
- 1 tsp coconut oil
- 1 tsp turmeric powder
- lime or lemon juice
- curry leaves or other greens

Method
- Combine only ¾ of the taro and water, bring to boil, cover and simmer 10-15 minutes.
- Grate ginger, slice chili horizontally into small rounds, (deseed if required), dice red capsicum if using, chop cashews.
- When taro is soft, mash or stick mix in the pot. Add the rest of the taro, ginger, chili or red capsicum and soy sauce. Cover and simmer for 10 minutes more.
- Cut the nori along the lines provided, stack all strips together evenly and cut into squares.
- Add the coconut oil to the pot and when it is liquid, sprinkle on the turmeric powder. Add a squeeze of citrus and the cashews and stir. Taste for approval.
- Pour into 2 bowls. Float a few curry leaves on top. Insert several squares of nori stacked together, upright, halfway into the soup. Some will stay upright, others will wilt. Offer with best wishes.
