Green chicken curry and eggplant

Ingredients
- Valcom green Thai paste
- 1 garlic clove
- 500 gr chicken
- Lemongrass
- Ginger
- 1 Brown onion
- 1 Eggplant
- Coconut cream
- 4 table spoons of canola oil
- Salt to taste

Method
- Fry the diced onion, diced garlic, ginger and lemongrass until onion is soft.
- Add chicken to fry in the same pan. Let the chicken cook at high heat.
- Add eggplant and let brown further with chicken. Salt vegetables and chicken to taste..
- Add GREEN CURRY paste to cook paste and incorporate fully into vegetables and chicken
- Finally add coconut cream and cook all until chicken is fully cooked. Adjust seasing if required.
