Green chicken curry with shitake mushrooms

Ingredients
- 4 chicken breasts or th8gh fillets.I tbspn Volcom green curry paste600 ml coconut milk1 dspn coriander stems chopped1 desert spoon grated palm sugar1 tbspn Squid fish sauce3 cloves crushed garlic1 tspn sambal oelek or to taste2 sticks of smashed lemongrass12 large kaffir lime leaves hand crushed6 shitake mushrooms sliced and sautedCup of small broccoli florets

Method
- Heat 2 tbspns oil in wok. Add curry paste sambal oelek and garlic and stir until fragrant.Add bitesized chicken pieces, stir until coated and cook until golden.Add coconut milk.Add palm sugar, fish sauce.Add lemongrass, coriander stems and kaffir lime leaves.Simmer gently 15 minutes. Rest.Fry shitake mushrooms.Add broccoli flotets and mushrooms to chicken, heat gently.Serve with rice.Garnish with fresh coriander, basil, chopped chilli, lime wedge to taste.
