Green curry eggplant and vegie

Ingredients
- Valcom green curry paste
- 2 tbspn oil
- 1 eggplant
- Light coconut milk
- 3 red chilli
- Half a cauliflowers
- Pink celery stick
- Handful of corn kernels

Method
- Fry curry paste in oil until fragrant
- Add half a jar of coconut milk and cook until thickens
- Add remainder of coconut milk and all chopped vegetables and cook until tender.
