- Kaffir lime leaf
- Kaffir lime zest

- Baby corn
- Volcom water chestnut
- Garlic

Method
- Fry the chicken in the olive oil, volcom curry paste, ginger and garlic
- Add the green capsicum and chilli, reduce, add the coconut cream.
- Add the carrot, kaffir lime leaves, kaffir lime zest, and leave to cook for about 20 minutes.
- Add baby corn, volcom water chestnuts, half a bunch of coriander, and thai basil.
- Remove kaffir lime leaves, serve with fresh coriander on top of rice.
