Hearty Thai Green Chicken Curry

Ingredients
- 1/2 jar Valcom Authentic Thai Green Curry Paste
- 1tbs olive oil
- 500g chicken thigh, cut into bitesize pieces
- 1 large potato, cut into cubes
- 1 small broccoli, cut into bitesize florets
- 400g can coconut milk
- 1tbs fish oil
- 1tsp white sugar
- Basil, to taste

Method
- Add the olive oil and 1/2 jar of Valcom Authentic Thai Green Curry Paste to a wok, and cook for 1-2 minutes, or until fragrant.
- Once fragrant, add the coconut milk, fish sauce and sugar, and bring to a simmer.
- Next, add the chicken and cook for 2-3 minutes, before adding the potato.
- Let the chicken and potato simmer for 10-12 minutes, before adding the broccoli florets for the final 2-3 minutes.
- Serve the meal with rice, and a sprinkle of basil.
