High-Protein Vegan Sushi Bowl

Ingredients
- Nori sheets
- Firm tofu
- Sushi rice
- Pickled ginger
- Cucumber
- Edamame beans
- Soy sauce
- Rice wine vinegar
- Avocado

Method
- Cook sushi rice.
- While rice cooks, dice firm tofu into small pieces (1cm), fry in pan with a splash of soy.
- Chop all veges and pickled ginger and cucumber into small pieces (0.5cm)
- Once rice is cooked, mix with 15ml rice vine vinegar and cool.
- Once rice is cool add in all ingredients and mix.
- Serve with quartered pieces of nori.
