Home made furikake

Ingredients
- 3 nori sheets
- 2 - 3 teaspoons sesame seeds
- 2 teaspoons onion powder or fried shallots
- 1 tablespoon brown sugar
- 2 teaspoons garlic powder
- 1 - 2 teaspoons chili powder
- 1/2 cup dried shitake mushrooms
- 1/4 cup bonito flakes (omit for veg / vegan)
- 2 teaspoons salt flakes
- Main meal of choice (e.g. poke bowl)

Method
- Cut the nori sheets into short strips using kitchen scissors.
- Add onion powder or fried shallots, sugar and sesame seeds to a small pan over low heat. As the sugar softens, add the nori strips and stir through sugary mixture until toasty and covered. Set aside to cool on some baking paper.
- Place all ingredients into a small food processor or spice grinder and pulse until all ingredients break down into a coarse powder. Taste and season further if needed.
- Sprinkle generously over your dish of choice (great over a poke bowl as shown!) Store any remaining furikake in an airtight container or glass jar to have on hand for your next meal or snack.
